Ingredients

  • 2 g matcha
  • 30 ml water at 75 C
  • 150 ml whole milk
  • 1 tsp cane sugar
  • 30g mascarpone
  • 30ml heavy cream
  • 0.25 tsp cocoa powder
  • ice

Steps

  1. Whisk 30g of mascarpone with 30ml of heavy cream and 1 teaspoon of cane sugar until smooth.
  2. Sift 2g of matcha into a bowl and add 30ml of water at 75 degrees Celsius.
  3. Whisk for 15 seconds until smooth.
  4. Fill a tall glass with ice and pour in 150ml of cold whole milk.
  5. Pour the matcha over the milk and spoon the mascarpone cream on top.
  6. Dust with a quarter teaspoon of cocoa powder to finish.

Whisk about 15 seconds.

Sift the cocoa through a fine sieve so it dusts the cream evenly.
