Method

  1. Rinse and warm the chawan, then dry it with a fukusa cloth.

  2. Soak the chasen tips in warm water and inspect for broken prongs.

  3. Sift 2g of ceremonial matcha into the bowl.

  4. Pour 70ml of water at 70 degrees Celsius.

  5. Whisk lightly along the bottom, then lift to a faster wrist motion for 25 seconds.

  6. Finish by tracing the surface to pop large bubbles.

Hold the chasen lightly. Speed and wrist motion matter more than pressure.Almanac note

Keep the ratio that worked

The journal keeps this bowl (grams, water, temperature, and how it actually tasted) on this device, so the next one starts from what worked. It builds a 13-week heatmap as you go, and it is free and unlimited. Premium adds the tin cellar, so each bowl is costed against the tin you actually poured it from.
