Matcha tonic

Sparkling water over fresh matcha for a dry crisp drink.

Method

  1. Sift 2g of matcha into a bowl.

  2. Add 30ml of water at 75 degrees Celsius and whisk for 15 seconds.

  3. Fill a tall glass with ice.

  4. Pour 150ml of chilled sparkling water over the ice.

  5. Top with the matcha and stir once gently.

  6. Garnish with a lemon peel.
