Method

  1. Sift 2g of matcha into a bowl.

  2. Add 60ml of water at 75 degrees Celsius and whisk for 20 seconds.

  3. Warm 180ml of unsweetened almond milk to about 60 degrees Celsius.

  4. Stir 1 small drop of stevia into the milk.

  5. Pour the matcha into a mug and top with the almond milk.

Stevia is much sweeter than sugar. Start with one drop and add more to taste.Almanac note
