Method

  1. Sift 2g of matcha into a bowl.

  2. Add 60ml of water at 75 degrees Celsius and whisk for 20 seconds.

  3. Stir 2 teaspoons of honey into the matcha until fully dissolved.

  4. Pour into a teacup and top with 100ml of hot water at 75 degrees Celsius.

  5. Float a thin lemon wheel on the surface.
