Method

  1. Sift 2g of matcha into a bowl.

  2. Add 30ml of water at 75 degrees Celsius and whisk for 15 seconds.

  3. Fill a tall glass with ice.

  4. Stir 1 teaspoon of honey into 180ml of cold soy milk.

  5. Pour the soy milk over the ice.

  6. Top with the matcha and stir before drinking.

Soy milk can curdle if poured into hot acidic liquid. Cold mixes pose no issue.Almanac note
